Horseradish Smoked Fish Pâté

2TB horseradish
2 lbs smoked fish

Grind up smoked fish really fine
Mix in 2-3TB horseradish to your taste.

Serve with crackers or vegetables!

Sue Winowiecki’s Smoked Fish Dip

4 oz cream cheese, room temperature
1/4 c. sour cream
1 medium size smoked fish
1 dash hot sauce
1 pinch pepper
1/4 t. salt
1/4 sweet onion, finely minced
1 t. fresh garlic, minced
1/2 t. dijon mustard
1T olive oil

Combine all ingredients in blender and blend until smooth.  To serve hot, spread in an 8oz baking dish and bake at 350 degrees for approximately 30 minutes, or until warm in the middle and golden on top.  Serve with warm bread or crackers.  It’s also good cold, too, served with fresh vegetables.

Beer Batter Perch Recipe

Captain Bill’s Favorite Recipe!

Beer Batter Perch

 1 cup flour
 2 tablespoons Lawry’s Seasoning Salt
 1 can of warm Budweiser Beer (Note: no light beer)

Open beer about 1 hour before cooking to remove the fizz.

Pour ingredients in bowl and wisk until clumps are out.

Dip fish in the batter and deep fry. Make sure fish are not too cold because the batter will
not stick.

Cooking oil temperature: 350-375 degrees

Captain Bill’s Parmesan Mozzarella Salmon

Many of my customers are asking for the Parmesan Mozzarella Salmon Recipe.

  1. Salmon (whatever size your Watta Bite Charter Captain can provide)

  2. Marinate salmon in 2 tablespoons Kosher Salt for about 1 hour.

  3. Place salmon in heavy duty Aluminum foil.

  4. Season with what ever your seasonings you prefer. Lemon pepper is a good choice.

  5. Place chunks of butter on salmon.  Place on the Grill. Cook salmon until fish is done.

  6. Coat salmon with generously with parmesan cheese. Layer a thick layer of Mozzarella cheese over the parmesan cheese.

  7. Close grill until mozzarella is melted. 

  8. Use spatula to remove the Salmon from skin and serve on your plate.

Makes your mouth water just thinking about how good this is going to taste.
